Long-life milk products
Evaporated milk
describes milk which has been subjected to a process of evaporation by which it is dehydrated. The use of negative pressure at a temperature of between 40 and 70 C allows for a dehydration process which is gentle on the milk. The main types of evaporated milk available are variations with a fat content of 7.5 and 10 percent or low-fat versions with 4 percent fat content. Sterilisation gives evaporated milk long durability.
Skimmed milk powder
is a dried-milk product made from dried skimmed milk (with a residual water content of approx. 4 percent). Skimmed milk powder contains around 36 percent protein and 52 percent lactose.
Whey powder
is made of whey. Whey is a by-product of cheese making. Whey is available in sweet and
acid whey powder variations. Whey powder contains around 11 percent high-grade protein and 70 percent lactose.
Whole milk powder
is dried whole milk. It contains around 26 percent fat, 25 percent protein and 38 percent lactose.
